AMASS RESTAURANT by Matt Orlando, former Head Chef at Noma opens today July 17th on Refshaleøen.
Orlando: I want the farmers to tell me the most delicious products they have on that specific day. I don’t want to tell them that I want a radish that is 5cm long if there are radishes that are 9cm long that taste better. I want to create a restaurant that I personally would want to visit.
